We prefer our meats to be free of MSG, Nitrates, Nitrites, Preservatives, and any other unnecessary things. Finding meat like this, that the average person can afford, normally doesn't happen unless you're lucky. So the only other option this left us with...Learn how to make our own! It's delicious and tastes just like the nostalgic grocery store kind, but better in our opinion. It took a few tries to get it just right but, I think I got it down pat. So, today I'm sharing with all of you!
Ingredients:
1-5 to 8 pound pork shoulder( preferably pasture raised on non GMO feed but I do realize that's not always accessible. So, whatever you can find). OR.. If you don't own a meat grinder you can just use organic plain ground pork.
4 TBSP Homemade Brown Sugar
3 1/2 TBSP Dried or rubbed sage
5 tsp. Pink Himalayan or sea salt or Redmond Real Salt
2 1/2 tsp red pepper flakes
1 1/4 tsp black pepper

Directions:
If using a meat grinder, cut all meat away from bone on your pork shoulder. Cut meat into small enough chunks that will fit into the hopper. Run meat through 1 time. I did mine on a medium coarse because I really wanted the seasoning to permeate the meat.
Once you have all your meat ground up, set aside.
In a small bowl add all your seasonings and spices together and mix will.
Sprinkle spice mix over meat and mix WELL with your hands.
Once meat and spices are fully incorporated, you can cook right away, or store in freezer.
I like to make half the batch into patties, and half the batch just freeze in 1 pound increments for sausage gravy, or Italian dishes that may call for sausage.
