This recipe is made from the Copy cat Jiffy Mix we made Earlier.
It's so moist and so good. With the perfect amount of spicy sweetness. Serve with with chili, Ham and bean soup, Collard greens, or by itself! You can omit the Jalapeno and have your very own actual Homemade Jiffy cornbread with a "twist"
Ingredients:
1 Package of our Homemade Copy Cat Jiffy Mix
2 TBSP butter or bacon grease
1/4 Cup milk
1 Egg
1/4 Cup sour cream
1 diced fresh jalapeno (optional)
1 sliced fresh Jalapeno for garnish(optional)
Honey for drizzling
If you're not using Jalapeno, you can leave plain or substitute the Jalapeno with 1 cup of Corn.
Directions:
Preheat oven to 400 Degrees F.
Add all ingredients except the Jalapeno slices, to a bowl and mix just until it's all incorporated.
Pour into a 8 inch cast iron skillet or 6 Lined muffin tins. Top with sliced Jalapenos.
Bake for 15-20 min, or until a tooth pick inserted in the center, comes out clean.
Once it's done, remove from oven and drizzle with honey to your liking.

Notes:
This recipe can have as many variations as you can imagine.
You can add bacon, rotel, cheese, green chiles, roasted garlic, whatever you think you might like.
